monitor settings

Doing alot of digital imaging manipulation w/ a system that uses and Nvidia Quadro4 750 XGL and was wondering why my monitor settings only provide True Color (32bit), High Color (16bit) and 256 color. Shouldn't there by a Millions of Color option. Which one is ideal for digital imaging work?

32-bit = 16.7 million colours.
