OK, the only (logical?) reason to run 1Gb memory is if you use it for Video editing and the like, and for servers, correct?

yes. the average user (even most power users) won't use all 1024mb of that ram. people who have servers, do sound/video editing, satellite image processing... etc will use just about all of it. if i were doing the above stated i'd probly look to get even more.
