#1 - I'd set it at something like 60C
#2 - When you smell smoke it's too hot! (j/k) :)

Does your BIOS support shutdown at a temp? Set it to 60*C. That way it'll definately stop the CPU dying. Set up your monitoring software to 10-5*C less, so it gives a bit of leeway.
