I was just curious if mixing say a 512MB stick with a 256 MB stick of DDR had any side effects? Also, a friend of mine is using PC2700 ddr, and I was going to give him an older stick of PC2100 that I had lying around. Since he's not overclocking (atleast for now), they should work fine together right?? He'd only be limited to the 2100 when overclocking I'm thinking...

Generally different types should work fine(ex PC2700 and PC2100 should work fine together in a PC2100 board). You may see that your system(FSB) will overclock higher with one stick of ram then two(even if they are the same type). So yes, different types and sizes should work together but there is always a small chance they won't.
