Right click the item you want to delete. On the menu click delete.

Or: Right click on the start button. Click on properties. Click on "customize". Click on the advanced tab then click on the "clear list" button.

Also if you don't want them to be displayed at all, r-click the taskbar, properties, start menu, customize, advanced, and take the chek out of "list my recently opened documents".
