I bought the hold down kit from aquastealth, and when I try to tighten them down, the screw just rotates. I've noticed that other kits use nylon bolts to secure the screws. Do I need some or maybe am assembling it in the wrong order? It goes- thumbscrew>spring>metal washer>plexiglass>waterblock>Motherboard>nylon washer.
That's right, isn't it?

Oh yeah, and does anybody not use springs? Is it possible?

I don't use springs on my waterblock... The springs help prevent you from going to too tight, so if you be careful and stuff, you don't need springs. :)

What about the way the screws connect to the motherboard? Do you have bolts on either side of motherboard?

My problem is that when I try to tighten the thumbscrews, the entire bolt rotates and I can't tighten them.

strange well maybe you need to screw them from both ways !
it seems like the bolt from the motherboard dont get any friktion to hold it on place when you screw harder !

heres what you need, stick a nut on the other side of the mobo, on the socket side, tighten it real good, then try, i know how it is, it sucks
i've seen people superglue the screw to their mobo

erm..perhaps, but I think they are more used to keep even pressure on the chip
