I was wondering what I should do.
1. Should I go w/ a direct die phase change sys
2. A pelt, or double pelt, cooled with a water chiller (evaporator in coolant)
What do you guys think, I think I should be able to do both pretty inexpensivly, but what do you think would be better, evertyhing considered, including the aggrivation level of putting it together.

call me gutless, but personally i would go with a single pelt and water chiller. here's why.
the advantage of double pelts is minimal compared to single pelts from what i've read. that seems to be the consensus in all the tech documentation I've been reading lately studying pelts and heat transfer. something to do with efficiency in heat migration and transfer negates the superior cooling capacity of the dual pelts.
as for phase change, ive been reading a lot on that lately also and this is why i said you can call me gutless. i know i could do it, and it is the best of the best right now in extreme cooling, but the work i would put into it would be more than the pay off. if you feel like a challenge though and have the time to spend i would say go for it, it would be great experience to post on the forum. but personally still, i would steer clear of it.
a pelt and good water cooler should get you on die temps around 0C, with the efficiency of the water cooler being the determining factor.

I'd only have two things against a water-chiller and pelt, one, I'd have to setup my own phase-change sys anyway, to cool the res, and two, it would take up a lot more room. For direct die, I'd just be worried about making the block. also, the plets, coldplates, etc would end up costing more money. I think I could end up doing dierct die for the price of the metal for the blocks.
Plus, you have extra bragging rights :)

I guess it depends how much of a wimp you are ;)
I ended up deciding against it because of the tools involved.
After the cost of buying all the guages, extra wb, and other tools I might has well have bought a vapochill.
I'm planning on going "ghetto" w/ it. I'll use propane, and no gauges
