As you know, my 1.4 ghz T-Bird (as all of them probably) have those tiny little pads/feet on the top. When i am mounting my new waterblock, will i want to take those pads/feet off? Or just go ahead and keep them on? I would think they would keep my waterblock from getting nice contact with the chip, but im not sure. Thanks again guys.

Those little pads help distribute the mounting pressure over the CPU core surface and prevents the waterblock from rocking and rotating about the core (which may chip it). If you waterblock is too heavy, you might want to consider using spongy double sided tape as extra pads or a shim to back-up the pads. Even with a shim, do not remove the pads!!

They're there for a reason.

If you tighten it down enough you'll get good contact with the core. Those litte feet compress quit a bit. They also help grip the block to prevent it from shifting and sliding around. Which is good.
