Is there a way to hide the no nonsense client without setting it to run at startup or as a service? I have a friend who's willing to fold for me (yay!) but he doesn't want the open window, or it to run at startup... is there a way to do this?

As it describes in the thread that New_Novice mentioned, you can use HideIt or EMIII to hide the Folding client window. Or you can run it as a scheduled task... just remember to disable the 72 hr shutdown of the program.

What about the google toolbar? Wouldn't that be a good thing to use? He wouldnt even know that it is running

No, that's the thing... he knows it is running, he doesn't care. The main thing is, for some reason, he doesn't want it running at startup, which makes things kind of complex. Luckily, I convinced him not to care, so now it just runs at startup.
