Would I have a performance drop if I used Windows 2000 server, instead of Windows 2000 Pro?
What I'm really asking is, should I use 2000 Server for gaming, or 2000 Pro?? or is there a difference?

You would definately experience a performance drop w/ Server over Professional. Server is meant to be used as a server OS, and as such, has more toys and buttons, and also more services that run at startup. Now these could be disabled, but if you're just going to disable the services, why wouldn't you just use Professional?
I'd stay w/ Professional :)

You would see a performance drop if used for everyday use, I put server on my server here at home and have found it increased performance when working as a server.
I agree with Oni, use Pro for everyday use and server for server use.

How long has it been up?
Windows 2000 has something called Drive Indexing. What it does, is creates a list of commonly accessed files. This list gets bigger and more optimised as the system is running. You'll often find that disk access speeds up if the system has been on for a long time, because the OS knows exactly where on the drive to look for something, and doesn't have to query the MFT every time.

My server was up for about 3 weeks until a power out the other day. At the moment it has been up for nearly a week, I use IIS features in server aswell instead of separate 3rd party programs.
Well, IIS is available in Pro, too. I use it for my webserver/FTP (when I put the FTP up, that is :))

Yeah! Screw the formalities of actually double-checking where something is, just assume it's there and write to it! :D
**WARNING: YOUR NTFS FILESYSTEM HAS EXPERIENCED A "not my fault" FATAL ERROR, AND HAS BECOME CORRUPTED**
Hey, I've never had a problem w/ it enabled.

actually, it works as a webserver, offsite backup, remote storage, and terminal services server.
Last reboot was for adding hardware.

The reason I'm using Server is that Pro is limited to 1 website and 1 ftp server. IIS on server and above let you have more that 1 site hosted from one machine.
I currently have x3 websites on different ports and an ftp site.

within the week, i'll be adding more hard drive space to mine, reformatting, and probably turning it into a domain controller, firewall and gateway aswell.
