So what would happen if I put a canterwood in my 8PE667 Ultra2 and tried OCing it? Would I get a better OC or worse?

The answer either way is, nobody knows.

Until we see tests and owner reports of production boards and procs, all we have to work on is speculation and guesses-some educated and some not.

Also remember that when reading these reviews that the top FSB speed allowed in the BIOS doesn't mean jack if the chipset can't run it. Seems obvious, but look at how many SiS645 boards were sold.
