Alright.

If I where to create a power source for a pelteir from two regular computer PSUs, would I connect them in parallel or series?

I'm not too sure, but if I where to connect my PSUs in series, I should get more power out of it right? Or is that a bad thing?
 
are you looking for more voltage, or more current out of them? for more voltage you would go in series. for more current, in parallel. However, parallel operation will result in the same voltage output as one standalone. Series operation will give you the current output of the lower-rated one.
 
Yeah BGPatterson is right, the 12v lines of the two power supplies would give you a current output of the two added together.

Just don't kill yourself trying to wire it.
