What is good about the Corsair Twin Chips, compared to just the regular Corsair XMS single chip?

Although if you get the next generation like 3200 -> 3500, it will be the same.

Nothing....the Twin-x has just been verified that both sticks of memory "play well together" when used in dual channel configuration. Most of the time you can just buy the non-TwinX and run dual channel trouble free. Occasionally, though, you may get a pair of sticks that don't work well together. Twin-X certification just guarentees that won't happen.

He is basically asking about the Twin-X...you gave him an answer about Low latency. Btw, the XMS3200LL & XMS3500c2 both use identical chips...Winbonf BH-5.
