I just bought an Asus P4S800 with a 2.6 P4. Reviews on newegg looked promising. Any suggestions would be extremely appreciated.

Nobody knows yet. It's really new. The 1 drawback I see is it doesn't appear to support Dual-channel.

Does that pertain to the memory? Will that make a big difference in performance?

Correct it's the memory. It effectively doubles your memory bandwidth using DDR.

As money is a concern, what would be the next best mobo than the p4s800? The p4p800 deluxe looks good, any in between you might suggest?

The s series is the same deal, no dual. Hard to go wrong w/ p4p800. I've got the Deluxe and think it's one of the best boards made. I've heard alot of good things about the Abit IS-7 as well. But I've never used one.
