P4 2.4 vs 2.6 or 2.8 Ghz - need help...

I'm going to build another system and I've been reading a lot on overclocking.... I figure costs will be somewhere between 600-800, but... my main question is the CPU. I see the majority use the Intel P4 2,4 Ghz 800 FSB. But the cost of that cpu is staying very high because of the demand for it. I can get a 2.8 for bout the same cost. Will I be able go overclock a 2.6 or 2.8 higher than the 2.4 or get less heat at similar boosts. One more thing, Running dual channel memory on the board below. Can I get away with using just 1 dimm temporaily, or doesnt that work on dual channel.
Here's what will go with it.
CPU: Intel P4 2,4 Ghz 800 FSB or............
Mainboard: Asus P4C800-E Deluxe or P4C800 Deluxe intel875P cost?
Memory: 2x256mb Geils DDr533 ultra series
Cooling Fans: Thermalright sp94, mx 159 (northbridge)
HardDrive: Maxtor 160G 7200
