I'm building a new system with an Abit AI7 and a P4 2.6c

I'm pretty much sold on these 2 opcion but I'm not sure about memory, ofcourse I'll be o/c'ing it. I have a watercooling system.

Which mem do you guys recomend and as I noob I should also learn what should I be looking for as far as performance.

TIA.

Depends a lot on your budget and overclocking goals. However, RAM with the BH-5 chips would be your best bet, especially since you'll have a mobo with high vmem settings available. Here are some good choices.

Mushkin PC3500 Black level II or OCZ PC3500 Platinium Edition.

Kingston HyperX PC3000 or PC3200 (non"A") RAM. Just make sure it's rated 2,2,2,6,1T and it should have the BH-5 chips. My Kingston HX PC3000 outperforms my OCZ PC3500 EL.
