When overclocking by increasing the FSB, should I use single or dual channel configuration? Which tends to be more stable? Thanks.

DCDDR will top out before SCDDR so your FSB won't be as high. My advice would be to overclock as high as possible in single channel, run some benchmarks to evaluate bandwidth then switch to dual channel. Overclock as high as you can, run some benchmarks and compare. If this is for an Intel system, go DC by default.
