I have an PIII 733@825.
How much more can I overclock without my sytem being unstable?
There are so many variables that will determine stability, that there is no answer for your question.
Variations in the models of motherboards, memory and video cards will have an effect. But so will the exact motherboard, memory stick, video card and CPU.
So say you went out and bought Crucial memory so that you had a good quality stick of memory. You might have better stability if you bought another brand, but you also might have better stability if you got lucky with another piece of Crucial memory from a different batch.
Even more important is how lucky you were with your CPU. The ability to overclock varies wildly from chip to chip. A lot of what happens is luck.
To decrease the luck factor for the CPU some people sell pretested CPUs.

There is only one way to find out .....................try!!
It depends on the quality and overclockability of all the hardware in your machine. Everything from memory to video cards, network cards, mobo, etc make a difference and any one of them can hold you back. Every cpu is also different some just OC better then others.
Another important factor is cooling the cooler things are the faster they tend to run. This is up to you and can range from mild to wild.

Here are the two primary factors
Heat - The processor gets hotter, can you get the heat away fast enough to keep it cool?
FSB Speed - This is how fast the FSB is set at. Stable FSB options are 66, 100, and 133. Anything in between is not as stable. Often you can deviate from this some, but sometimes certain compenents will only run at a stable FSB, these are often cheaper made parts.
This is just a basic thing into what makes something stable or not. Have fun overclocking.
