Why dont they use this, 2x the bandwidth :)

They do its just not called dual channel on graphics cards... its the bus width...
e.g older cards used 64bit buses to acces memory (same as mobo's up until the nForce and new intel chipsets).
Then graphics cards moved on teh 128bit busses effectivly doubling the bandwidth (which is what the dual channel mobo's do now).
The R350 and R360, as well as the FX5900 class cards now all use 256bit memory busses, effectivley 'quad channel' memory architecture :)
