When I connected my L7 bridges yesterday I got my T-Bird up to 1.877 Volts because its default was 1.776. how can I adjust it to not go over the threshold of 1.85V?

1.85v is the upper limit of all main motherboards (I think EPOX and IWILL allow high voltages upto 2.1v but Im not sure). What most people do is the voltage trick, this can be found somewhere in reviews and tips under cpus (I think) on www.overclockers.com
Good luck on pushing that beast, make sure your coolings good for anything above 1.85v

what happens when you go above that?
is your graphicscard at danger?

The readings you get in, say MBM will always be a little off what you set your processor to in the BIOS. Motherboard makers intentionally set the onboard VRM to overvolt the processor slightly - this makes the board more stable for Average Joe who isnt concerned with temps, voltages, or overclocking. My Duron gets 1.93 volts vcore with the L7's connected and that extra little bit of voltage was enough for me to break through the 954 MHz barrier and get my Duron to 970. If you do not want your processor going over 1.85v, you're going to need to set it lower in the BIOS and check your voltage readings in MBM when you reboot.

aha....see the problem is, that the voltage setting in my bios (gigabyte 7vtx) are not changeable??? They are all locked?
I can either do the L7 bridge up to 1.85V default or nothing. I cant go in 0,1V increments. Is there any software for this?

You can modify the voltage in .1v increments based on which L7 bridges you connect (and which you leave open). I think there's an article on this at Tom's Hardware, I'll see if I can find it.
