Does anyone know if the Thermaltake Memory Cooling Kit will work in dual sided ram? Like a 256mb one that has chips on both sides? I looked at andy's guide and he doesn't mention anything, yet I noticed it uses a clip that needs the other side maybe?!?!

Yes, It will work. One way is to stick the heat spreaders on both sides of the ram and use the clip to secure them or go clipless. The other way is to use the ram sinks on one side and a heat spreader on the other, also you can decide if you want to use those clips. For single sided ram, the clips are not to be use at all.
