You probably would've stood a small chance of being able to use 1t with the single stick, but it shouldn't be too big of a deal either way. You will have to use 2t almost for sure with 2x512, but it doesn't hurt performance very much.

IMHO you should be happy that you did not order the 1Gig stick, as almost all 1gig sticks overclock far worse than their 512MB pendants. So, be happy with the 2 512MB sticks that will overclock quite good, in comparison to one 1Gigabyte stick that would overclock worse.
I didn't hear of a decent gigabyte stick of RAM yet.

Well since I plan to go to 2x1024 soon I picked up a single 1024 stick of the new EB and it isn't too bad. If you compare it to what some people are getting from EB then its not good but 225 is fine for my stable machine, especially since my board is horrible and even BH-5 won't run 230+ in it. If you have the plan to go for 2 gig eventually then go for a single, if not then go for the duel pack. The price is the same but if no duel channel then why bother with a duel?

The A64's are a totally different story, though. They just hate running two double-sided sticks. No matter how good the sticks may be on their own, when you run two at once, you can't get anywhere without running 2T(like disabling CPU interface).
