Ok I need to pain tmy apartment but its in a slightly odd layout so my rooms arn't necessairly square or on the same floor. How do I find out how many sq I need to paint using just the hight/width and in some cases... depth of the walls? And ceiling too

Divide it up into sections that are square, and then add them all together.

Well, if you have consistent celing height then you just use perimeter x height. However, I suspect that you are looking for something more. For example, what do you mean by depth that is not going to be part of the perimeter? (I have an oddly shped apt too so I have an idea what you are looking at).
Also, check with your paint supplier but the usual rule is one gallon/400 ft^2 for one coat. If you have much in the way of surface prep that may need to be modified but not by much.

I'm thinking painting the living room an earthy red color with the ceiling being a light latte beigeish but not sure where to split into the second color along the long wall where the stairs are. I was thinking a greenish hall starting at the end of the stairs where it meets the hall

Well, a plan view would be a big help as we need to get to a perimeter. I ran one off from the numbers in your pics and I am coming up short with respect to the wall between the corridor and the smaller room. From your second pic it looks like there may be another wall section in the corridor that would be part of what I would need to close the plan up (but that is just a guess).
Also, what is going on in the smaller room and how thick are the walls that seperate it from the main area? If that is not enough, I haven't even tried to put the stairs in yet. Where do they go and where in the hallway are they?

You will just have to do an educated guess how much you'll need overall and you'll want to make sure that you have extra (just not lots) incase some issues arise.
Height times length..On each wall...add together totals and u have the sq footage to be painted..
Do not deduct for door ways if you plan on paint moldings the same color. that will allow for an overage but not a ton of it..
