How'd they do that?

I keep seeing pics of guys with "custom bios" where they show like different logos instead of that Energy Star one or whatever. How does one do that? I'm guessing it's not something simple as you could wipe the entire bios and render your machine useless, but I'd just like to know how they actually do it?
