What is Folding@Home???

I am fairly new to the forums here. I have seen a lot of references to the terms "folding" and Folding@Home. Just what do these mean? I don't want to sound like a dumb@ss for asking, so if you could just explain what they mean it would be appreciated. Also, what is the best temperature monitor out there to be dl'ed? Thanks
