Does Windows XP has Dos hidden, like Windows ME, or did microsoft remove it completely ?

It's gone as in Win2K. It has a command line which emulates DOS in a sense but is still not a true DOS platform. It's what Microsoft calls their Virtual DOS Machine.

But then how can Windows boot ? the autoexec.bat and the config.sys files, aren't they processed in dos ? Or am I too old fashion, staying in the Windows 3.1-95-98 world ?

Autoexec.bat and config.sys aren't used in Win2K and XP. You can actually delete them.
If you open them with notepad you will notice they are both completely blank documents.

One more question : is Windows ME the same (doesn't have dos, just the emulator ?) Or did it just hide dos ?
No problem.
The reason they even hang around is because you can add arguements to those files and they will execute during boot up.
Some simple arguements would be to clear your temp files before booting, defragging the MFT or defragging your pagefile. The defrag arguements would call another program to actually do that.
In WinME they moved the config and ini files to the registry. Its faster.
