Humm. I'm building a fairly hi-end setup and I think I may have over looked one aspect: the motherboard's fan for the (I think it's called) clock multiplier chip?

If I'm shooting for 280 to 300mhz FSB (or more), should I be worried about the motherboard's heat as well? I've got just about all other areas covered.

Is anyone having to go to the extreme of water cooling for this device? I wouldn't mind. Cost isn't an option here.

Water cooling the chipset may help - and if you have money to burn (ha ha ha - bad pun sorry) then try actively cooling it.
