How can I set my case fans to run @ 5V/7V by connecting two of their power cables wires with a wire?

Well to run it at 5v's use the red wire on the molex connector instead of the yellow wire. To get 7v's use the yellow wire as normal, but use the red wire for your ground.

so if I've understood : I must connect red and black wires to get 5V and yellow and red wires to get 5V, right?

Yes red and black for 5v's, and yellow and red for 7v's.

With this system you can switch between 0, 5, 7, and 12 volts.
