I'd have to say 2000...........

Use the fastest machine of the group as server, it'll help as well.........

I would say linux will make the best server, it's what I use for my server. Since it will be used as a server many other machines will have access to it and this really increases your odds of getting infected by a virus and loosing all that data stored on the box. Windows viruses don't run under linux and since linux is based on permissions on a file by file basis even if there was a linux virus it couldn't do much unless you were logged in as root.

Install 2000 Server or Advanced Server. Those are about the best for networking, save for Linux.
