Free e-mail monitoring program ?

My boss asked me if I could monitor someones e-mail in the office(think they are send out info they shouldn't be). Does anyone know of any free e-mail monitoring programs or have used one before? Something simple..like just read their out going mail or something.

Redirect their SMTP server to a different one, one which you control. Either by redirecting traffic which goes to port25 from their IP or by changing their smtp server in their mail client.

Don't have a SMTP server. We use one that is packaged with our web site.
