I got a couple of San Aces Fans but they dont have any connector plugs on the end. 3 Wires eminating from each fan, red black and yellow. Do I need a Female or Male Molex Connector for these? Going to be used with a Sunbeam Fan Controller.

if its using a fan controller, i'm guessing its using a 3-pin connector. In that case, you need a female 3-pin fan connector.
Female 4-pin molex is what you need for a molex connector from your PSU

Its a Sunbeam Rheobus. It has 4 Connectors coming from it. each connector has 4 holes on it, however only 2 of these, next to each other have a wire leading to them. One has a Red, one a black.

The sunbeam rheobus uses 3-pin connectors. The same as your fans.

YOU DO NOT need to use the included molex adapters (pictured above) to connect your 3-pin fans to the rheobus. Just plug your fans directly into the rheobus.

If it's a normal fan, connect red to 12v, black to ground, and leave the yellow wire unconnected. (The yellow wire is a signal from the inverter that drives the 3 phase AC motor inside the fan. It's used for interactive speed controls and fault monitoring.)

I see the three Pin Connectors on the back on the Sunbeam, so I should just connect the wires of my fans directly to them? How do I do that? just twsit the Wire end round the Connector? (sorry if that seems a stupid question, my first build you see)

I overlooked the part of your post stating that you fans are lacking connectors. The wires coming off of the fan are as follows
Red: 12v+
Black: Ground
Yellow: RPM sensor (unused on the rheobus)

I think it would be a good idea to add the 3-pins connectors to the ends of your fans. As a cheap option you could clip the molex adapters that came with your rheobus, then wire the fans to those using the same wire color.
Yellow is unused on the rheobus since it is the RPM sensing line.
The other optionis to buy the pins and connectors you need to put the connectors on the fans.
