How much better is, let's say, dual channel 2x512mb than a single 1gb stick? (assuming they are of the same quality)

If you have a motherboard that supports dual channel, definitely use it, because theocratically your mem. bandwidth doubles, from 3.2 to 6.4 ghz on DDR400(pc3200x2=6400mhz).

ok, i see now. i'll definitely go dual channel then. i didnt realize that it combined the bandwidth

Not 3.2 to 6.4 ghz, 3.2 to 6.4 gb/s. Gigahertz is a means of rating speed, not bandwidth.
