Greetings,
I found a nice thermometer at Radio Shack which has two readings, internal and external. The external range is from 0°F-160°F (-20°C to +70°C) which is more than enough for most water-cooled systems, and both sensors can have a high/low setpoint to send an output signal, which could be used to power off the system, send a page, etc.
