If I buy 1gb of this tomorrow, and then buy another gig in a few weeks, will it be dual channel?

Should be okay as long as both modules run at the same speed and timings at the same amount of voltage.
Odds are very good that it will work, but keep in mind they aren't offering you any guarantees that it will. You might run into a problem if PNY discontinues the part or changes the chips they use for that part number after you get your first stick. That said, I'd do it if I didn't have the budget to get both sticks right away.
If you can't get another identical stick from PNY when you're ready, look for something that uses the same chips as your first one. RAM cares about voltages, timings, frequencies, and organization, but doesn't give a hoot about brand names.

I think I'll have enough money for TWO today or tomorrow. Then I'll take back this RAM I bought from a PC store and tell them it was unstable, cause it was!
