Does anyone know of a program that will display what the artist/song/album/rating that is currently playing on my desktop? I'm looking for something minimalistic that will give me all the basic functions you need for mp3 playback but without having to open a huge window to change it around. Thanks.

did you try clicking "advanced" -- "switch to mini player"

also, under the "preferences" section, in the "advanced" tab, you can set itunes to have a tray icon which displays track info when you mouse over.
 
Like veryhumid said, "mini player" should do the trick. If you don't like that there are some widgits for yahoo konfabulator or whatever it's called now.
 
another option for switching into and out of "mini player" for itunes is crtl+m.

theres a setting to make it stay on top of all the windows
edit > pref > advanced > general
"Keep mini player on top of all other windows"
