What's the "proper" way of actually installing these things... I never figured it out.

what i do is i...:
1.) uninstall current drivers and control panel and restart pc
2.) install omega drivers and restart pc
3.) make sure everything is ok in smartgart and direct x. :)

Usually they are a touch slower but have better image quality.

Since I have to get rid off CCC, are they still able to run Crossfire???

I'm not sure, but I would think so because they are a "replacement" for ati's drivers. I would advise you not to download these, I'm having trouble with them.
