I think it'll fold fine. I don't really have as much experince folding on AMD rigs(I don't really pay as much attention to my AMD borgs, mostly my Intel rigs b/c I use them a lot more) but I would definately recommend that video card to anyone. I have one similar and I absolutely love it!
*Edit: But my Intel rigs seem to get more ppd than my AMD rigs, but probably because my AMD rigs are really busy doing stuff(I use them as servers) all the time and I give my Intel folding rigs a few more cycles.

Should fold just fine. As for production, well that all depends on the units you get served. Take a look here (http://www.fahinfo.org/index.php?Graphs=true&Individual=true) to have a general idea of what I'm talking about. Have fun with the new build!

Now I'm not up 100% on AMDs but isn't ClawHammer based on 130nm die? are Venice's and Manchester's what people want now days?

Yep, you should definately go with the San Diego core.
EDIT: It's actually a $1 less and free shipped

That's right Manchester's are dual core right? Yep definitely go with a San Diego instead.

I'd choose a different cpu. Clawhammer has a very small 64Kb L1 cache. Which means a lot of memory accesses will be from L2 cache, which is good sized, but won't make up for such a small L1 cache (which if the data were there, it would be fetched faster than in L2).
Ideally, you'd get an AMD (either Opty or AMD64) which has 1) dual core (so you can run two consoles at the same time, or use one, and have the other fold, AND 2) a 1 Meg L1, with a 1Meg L2.
Of course, the cost for same may exceed your budget, and I can't help you there. :p
These chips do run hot - I have a 3800+ X2 and it folds at 47 to 57 C with standard heatsink & fan. The ten degree difference depends on the ambient air temp (I'm in Southern CA and it's been a very warm "winter". so far.
Hope that helps.

P.S. If you go for the X2 cores, I'd go for 2 Gig's to allow you to fold 2 advanced methods WU's, and STILL have memory enough to do something meaningful at the same time, if needed.
I got just one Gig (which I thought would be fine), but the WU's have changed since I folded some years back - and they need more memory.
In the future, I've got a feeling, they'll only get bigger.
