So I am using speedfan to monitor my temps while OCing, but I am confused on which temp = which piece of hardware. I know temp1 = cpu, but what are the others?
 
well, on my board temp 2 is the cpu, temp 1 is the "board" temp and temp 3 is hdd temp.

it all depends on how you have speedfan set up, and what hardware you have...
very tricky program, im still learning it, and i like it more as i learn more.
 
oh well my temp 1 raises like 6 degrees when under load and the others stay constant, so i'm assuming that is the cpu
 
You can re-name the Temps and Fans in the "Config" menu! Once you know what is what - label them accordingly. Speedfan 4.28 works flawlessly on my dual core (4.27 would read "0" when my HD and Case fans went below 1100RPM).
