Would I get better performance out of one 1gb ram module or two 512gb ram modules in a dual channel setup?

from reading here which I never knew, if you ever want to go higher like 2 gigs which will soon be the needed amount, then 2x1 is better for performance.

2x512 in dual chanel will outperform 1x1gig. But that's not to say that slow, crappy 512 sticks won't be slower that a high speed, low latency, overclocked 1gig module though. All things being equal, dual chanel is faster than single chanel.

Always run in dual channel if you are able too..
