what do you think is better and why?
Good question.
I'd personally go with the 7900GS because it uses less power, produces less heat, and has faster RAM.
Even though it's only 20 pipes vs 24 pipes of the 7800gtx, the core has a lot of headroom.
But honestly... they're probably very similar in performance. Again, the less power/heat of the 7900GS is more appealing to me personally.

256MB
also temps are not to much of an issue to me because if i get 7800GTX they are going to be liquid cooled anyway.
how much of a difference does the 4 extra pipes make?

you should ask yourself, how much difference does the 4 extra pipes AND LOWER CLOCKS make?
I am 90% sure on this... bare with me:
7800GTX 256mb - 24 pipes, 430mhz gpu, 1200mhz mem
7900GS 256mb - 20 pipes, 450mhz gpu, 1320mhz mem
I'd say the clock difference ALMOST makes up for the 4 less pipes. And honestly, I think the 7900GS OCs potentially better than the 7800gtx 256.
The highest overclocked 7800gtx 256s that were sold are the evga 7800gtx KO, which was 490/1300, and I think BFG reached those same clocks too.
the highest overclocked 7900GS that I see at newegg is 525/1550:

So even comparing highest overclocks, the 7900GS memory is much more powerful... which is why I say it has more potential/headroom.
20 pipes higher clock vs 24 pipes lower clock sounds pretty neck and neck to me. Again, I'd say go with the 7900GS... lower power, less heat, and the newer series card.
But... does anyone know if the 7900 has more features than the 7800???
