Well if you run 2 cpu's then the most it can be is 200% 3 cpu's 300% 4 cpu's 400% .........

are you crunching with more than one machine?

It takes it's readings from you stats and not the machine you are running it on so if the time you have been running Seti is less that the total cpu time you've put in it will go over 100%.
