Should i get the 1700 or the 1800

I'm going to have a watercooling setup btw

and is it possible to make sure what stepping i get? any companies sell specific steppings or do i have to risk it, i'm probably gonna buy something from newegg.com

for all out speed just get teh 1800 ad it will propably beat teh 1700 overall, might not overclock as muchm but it stil has more mhz on it
