What motehrboard would go best?

I'm creating a computer for gaming and I'm getting and Core 2 Duo e6700

I was gonna get the NVIDIA nForce 680i SLI Motherboard to get the most out of my graphics card which will be either 768MB NVIDIA GeForce 8800 GTX or 512MB NVIDIA GeForce 7950 GT

but then i considered the Intel® Desktop Board D975XBX2 to get best out of processor

what do you guys suggest I get? Maybe a completely different one

Just in case needed to know - gonna get 2GBs of RAM
