I would advise against that. There is more support available for Apache because it is widerspread than IIS.

Setting up a basic Apache server is extremely easy.

However, if you want to install IIS, a quick Google search turned up http://www.webwizguide.com/asp/tutorials/installing_iis_winXP_pro.asp

I wouldn't say thats true. IIS is very easy to set up and Microsoft has a ton of help documents in their knowledgebase.

Being widespread is not always the best thing. Have you heard of security by obscurity?

I don't know about the difficulty of initial configuration in IIS; I have not used it.

Whether security through obscurity is a viable method of operation is debatable. Regardless, IIS is not obscure, over 32 million websites use it (http://news.netcraft.com/archives/web_server_survey.html).

I still maintain that there is more support available for Apache, especially if you aren't using it commercially.

what are you trying to host? a webpage or an FTP server?

if its a webpage use apache, you edit 2 lines in the config file and you are up.

I like IIS for FTP...plenty of documentation on google to help you out

lol... you don't use IIS to host a game server. You use the game.
