It should be a fairly simple question for DDR2 800 memory, which is best? Or how much difference will there really be between the two?

Also, one is EPP and one is "Crossfire Certified." Is it then worth it to switch to the motherboard which the winner is maximized for? (I'm building a new system.) And how much benefit can such a maximization be?
 
Well you are not gonna be able to tell any difference between them, im not sure about the whole crossfire certified thing. Makes no sense to me unless ATI just paid for that to be on the ram.
 
It'll be more motherboard dependant, if anything. Look for results on memory performance in the various forums to get RAM with IC's that happen to work best with the board. This whole SLI and Crossfire approved memory is a bunch of BS.
