Would the P3 1Ghz (slot 1-100 fsb) run on an asus p3b-f? I just can't leave it alone :D

Why not? if your Mobo doesn't support a multiplier of 10x, no probs, coz the Cpu automatically set the desiderd multip even if doesn't detected by the Bios, and about the voltage, well, no probs coz the P/// 1Ghz works @1.7 or 1.75v depends by the Stepping Revision (cC0 or cD0) like all the others Cellie's & P///'s :)

which stepping is better?... and the reason for the initial question is I saw this one http://www.googlegear.com/ggweb/jsp/ProductDetail.jsp?ProductCode=80607
as you an see it says it's only for servers or the l440gx chipset... so should I look into an alternative... like a slotket or something... and if I do a slotket would I get the performance?

Better go with a P/// 1Ghz FC-PGA stepping revision cD0 on a good quality slotket with voltage adjustments and a great HeatSink like the SK6 or the GlaciatorII.
Try to search into the Forum, coz there are some guys with this great chip that can gives you more infos, especially on the OC chance, that for sure are great! ;)
