Me and all the 9x kernal OS's has a sweet spot around 256 more then 512 and it actually drops performance. anymore then 256 and you wont notice much of an improvement.

the rest all do well with as much memory as you want to throw at them this also depends on what kind of software your running autocad ect you want plenty.

XP a minimum of 256.
 
The more you feed XP, the more it'll eat. I think the NT5 kernel supports up to 3 gigs for 2000 Pro, 32 gigsServer, 64 gigs Advanced Server, and idk how much for Datacenter Server (a whole farking lot, I'll bet!)

But anything over 384 is really overkill.
