Which blocks are most popular for these new higher end GPU's?

A lot of the EK-FC8800GTS Full Cover Water block for nVidia 8800 GTS are out of stock...

Any other suggestions?

I'd go with an mcw60, will also fit more than a 8800gts if you end up upgrading in the future, where a full cover is a 1 shot deal

Would a full cover block fit other future NVIDIA GPU's?

no full cover block is for the designed card only
8800gts =8800gts
mcw60= many different cards, 8800 included with correct adapter plate, also fits my 2900xt

I second the recommendation for a mcw60. I have read many good things about it and is currently my GPU block of choice for my future WC setup.
