This question ought to land me in the "Stupid question Hall of Fame".
If I were to 'stack' 2 80mm case fans on top of each other, would It increase the CFM of air moved?

Yes, it would increase, but not by double. Leaving a gap between them by say, 1/2 inch would keep them from being too much noisier.
Both fans, even if identical, won't run at exactly the same speed. Fan 1 would push fan 2, fan 2 speeds up until it drags on fan 1. They may oscillate up and down in speed slightly.
However, this doesn't mean you shouldn't try it. More air is more air.

'Fraid stacking is a waste of time and money. Unless--the fans rotate in opposite directions. Even then, the boost in airflow won't be worth writing home about.
I wonder how many times this question has been brought up.

I have seen it posted a few times... and many have tried it - but it is all based on what is it worth to you... I personally don't see the outcome worth the effort to do it.
