it's more of a difference in pitch. 7200 isn't much louder, but the sound is much more abrasive than the sound of a 5400.

Unless, of course, you are talking about hard drives, not fans? If so, the noise difference is negligible, but the performance increase is very noticeable for some operations. It was to me, anyway.
